Yes, we like breaded and fried okra, but surely there has tobe a healthier (and less messy) way to fix it. Then, someone suggested tossingthe pods in a little olive oil and roasting them. Barry tried it and we agreedthat okra fries are very tasty, and another way to add a green veggie to theplate.Oven-Roasted OkraFries 2to 4 serving
1. Placethe cut okra pods on a baking sheet; season with salt and pepper; drizzle witholive oil.

2. Bakeat 400° for 10 to 15 minutes or until browned and crisped.

3. Servewarm.
